Chai Boey...aka...Leftover Food........

my big wok of 'chai boey'.........which i cooked on the 2nd day of CNY.
i do not know whether anyone of you had eaten leftover food from any big festival dishes which is being recycle into another wonderful dish.......this is what i had done with my leftover nine course reunion dinner dishes which nobody wants to eat after it has been lying in the fridge overnight.....so instead of all these food cluttering my not so big fridge space i turn it into 'chai boey'...........here is how i prepare my 'chai boey'.............

Buy 2 big stalks of 'kua chai' or mustard greens...washed and cut or tear into big pieces of about 4 inches length....blanched in a wok of hot water for a minute or two.... drained and keep aside.....blanched a few pieces of 'kiam chai' (salted mustard green)soaked and cleaned beforehand.........drained......fry it in the wok with the 'kua chai 'and a few pieces of soaked dried chillies(seeded)....fry until fragrant and dry......then add in all the left over food to simmer slowly in wok for about 45 mins.....add some tomato sauce and chilli sauce to season it according to taste before simmering........add some water if the leftover food is too dry.....stir occasionally......and then enjoy it with hot rice when ready........
This dish taste heavenly if you had braised or roasted pig's trotter , duck and chicken meat in it......it had a sweet..sour.... and spicy taste with all the flavours of all the leftover food combine into something unique.........

This dish is one of my son's favourite. He could have 3 serves of rice with just this dish.

my two sons has not acquire their taste for this dish...maybe becoz in their minds leftover food is just leftovers....and have been taking freshly cook meals fr. young.....

Looks absolutely yummy! I made this with the leftover turkey bones from Thanksgiving and had the whole pot to myself since hubby won't even touch it. Better for me! I used my mother's recipe, pretty much the same except my mom use serai and assam keping.

I love "chai boey"! But I never have enough leftover to cook "chai boey", furthermore, I don't think this dish strikes my hubby fancy too. When I was young, I always picked up the mustard greens in the chai boey to eat. :)

Yes, I remembered this dish from my childhood when my grandma used to make it. I wonder if this will work with western food too. LOL!

moments in time - ya..left over turkeys taste good too..sometimes i used assam keping...but have not try serai yet...thks for visiting too...do drop by more often to 'drool' over my food..lol

little corner of mine - you can make yr own chai boey by buying some roast meats or braised pig's trotter to cook this....no need to wait for leftovers....to indulge yrself...

east meets west kitchen - western food like leftover turkey meat..pork roast..sausages...roast chicken...hams...can be use to make this dish with of course the mustard greens and some hot pepper added.....wishing you a happy and prosperous year of the rat too..

I really do like chai boey... left over food kept for 1 extra day means better flavours!!!!!

singairishgirl - i'm not too sure where this dish originated from...but i think all hokkiens and hock chiews cook knows how to cook it....my dear buddies of other dialects...do you all eat or cook leftovers like this..? please share....

i'm much better now....after the jabs...which is not so bad compare to the painful joints...

chai boey taste good to those who loves it....but to some it is just leftover food...i really love the mixture of flavours...

Hi, happened to chance upon your blog. It's interesting to know that ppl still eat this dish. I'm a Teochew and my family eat this on the 2nd day of CNY too. My mom told me it also symbolises abundance. My hubby's a Cantonese and doesn't believe in eating leftovers. :p But I simply love all the flavours being fused together.
