Classic Steak with Bearnaise Sauce.........

Yesterday my son H cooked a bearnaise sauce to go with his steak and served it with oven baked potato chips and rockets salad with parmesan shavings.......

Bearnaise sauce is actually a sauce of butter and egg yolks that is flavoured with shallots...tarragon....chervil....cooked in white wine vinegar......it goes well with all grilled meat.....here r some pics i took while he cooks....

cooking the chopped shallot..(1 no )and chopped tarragon in 2 tabs of white wine vinegar and 2 tabs of white wine....reduce to 1/3 of its liquid........strained and leave aside to cool.....


add egg yolks....(3 nos)... to cooled vinegar mixture and whisk well with a balloon whisk......

melted and cooled butter.................... 125 gms


continue whisking the egg yolk mixture over a pan of simmering water while gradually pouring in the melted butter til the sauce thickens and smooth......


the cooked bearnaise sauce looks like this...............


seasoning the steaks with sea salt and black pepper before grilling it in a hot pan til medium rare or well done.......see the two portions ? one is for his lucky brother.........i do not really like steaks......i only eat the chips and salads.....

son preparing the potatoes.....by dipping it in peanut oil ....and placing it in baking pan.....sprinkle it with salt and pepper before going into a hot oven to bake til cook..............

This dish sounds so unique... like a dish served in a classy fine dine restaurant. You and your familly members are all very good cooks eh? You took any cooking lessons before?

health freak mom - yeah..this dish is very expensive if you eat out..once i had to fork out rm 50 for my son's plate of steak at chillis...and so my 2 sons who love steaks..cannot afford to eat out....

you can consider me as a good chef for homecook foodlah...coz i never had any lessons in cooking..i just use my recipe books...i started to learn how to cook when i move out to stay on my own...when both my boys were in primary school... ...before that i was busy working as a music teacher and my in-laws had a livein maid...

sweet jasmine - i had a bite of the steaks with the bearnaise sauce and it was really delicious.. and his kor kor..elder brother who is a fussy eater give the thumbs up for it...

this is what we had for V day, we had to head over to a restaurant just to have steak, and here you are, served right at home. Cool, looks like your son cooks so well. is he into culinary arts?
