This is one way of making the meatballs look interesting and taste good. Cooking is so much fun if you can improvise it......... just like variations to music. Here is how i do it......
Ingredients:
300 gms chicken fillet
2 tbsp chopped spring onions
1/2 egg, lightly beaten
1/4 tsp ground black pepper
1 tsp sugar
salt to taste
1 tsp cornflour
1 tbsp of breadcrumbs
1 tbsp chopped chilli (optional)
some breadcrumbs for coating
10 to 12 quail eggs
Method:
Mince the chicken fillet and add to it all the ingredients above except the quail eggs.....mix well and then shape into small rounded balls. Pat hands with some flour if mixture sticks to hand. Place a quail egg in the centre of each ball and wrap mixture around it. Then roll ball over some breadcrumbs on a flat plate. Deepfry it in an electric fryer or in a pot of hot oil til golden brown. Can be eaten with rice or as snacks dip in your favourite chilli sauce or mayonnaise.

This is a common dish in my house. I also use minced pork or beef for this dish too. It's one of my usual party food, kids love them.
