Homecook Nasi Lemak....aka... Coconut Rice.....

A delicious wholesome meal.........

Nasi Lemak is a simple Malaysian breakfast dish.....but with the addition of other dishes such as fried chicken, beef rendang, tamarind fried prawn, prawn sambal...it can be elevated to an elaborate feast.....for lunch or dinner. Recently i made this well loved dish for lunch.....

For the coconut rice.....i used about 3 cups(600 gm) of washed rice together with a box of 200 ml low fat coconut milk and cooked it in a rice cooker......adding a pinch of salt.....2 slices of ginger......2 pandan leaves(knotted) and water to the desired level.....just like you cook your plain rice. When rice is cooked, fluff up with a fork or ladle....to spread out the coconut milk (santan) in rice evenly....and let it sit in cooker for a dryer texture for at least 10 mins.....before serving.

I served the nasi lemak with......hard-boiled eggs, prawn sambal, crispy fried ikan bilis (anchovies) and fried peanuts. I blanched some beansprouts in hot water.....drained and mix it with a tablespoon of onion oil and a dash of light soya sauce ....in place of the usual sliced cucumber which i do not have in my kitchen. I added some fried chicken nuggets to make it a wholesome meal.

Your nasi lemak is lovely! I have few questions here. Hope it won't bother you. hehe.

How come you only need so little ginger? I thought you should add more? And also, how do you determine the amount of santan used? I normally used a ratio of 1:1 for a cup of rice and water. If I add santan, which is some sort of liquid, wouldn't the rice be too soft?

Opps...too many questions. hehe.

kok- hi..kok..ginger adds flavour to the rice and too much of it will be overpowering....but if you really like the smell of ginger you can add more...

When i cook rice,i do not measure the amount of water used...just see that the water level is about 1cm above the rice will do....so for nasi lemak..i add in 200ml of thick santan to 3 cups(600 gm)of rice first before adding in the water to that level...(stir to mix before cooking).
