Spaghetti Olio e Aglio...........with chilli flakes and chopped anchovies...... topped with grated parmesan cheese............
Since son H made his first spaghetti olio e aglio for his big brother sometime ago.....his 'kor kor' fell in love with it .....and had been asking me to make this for him these days.......his usual white sauce were history for him.....and i gladly made it for him coz it is easy and i added some variations to it......
For those who are not familiar with this......i will explain it further......olio in italian means olive oil and aglio means garlic......so this dish is made by sauteing finely chopped garlic ( you can used sliced garlic too if you do not like it chop up) in olive oil til slightly golden and season with salt and pepper to taste... then stir in newly boiled and drained spaghetti to pan and coat it well with the fried garlic oil......
For variations.....i added 2 pieces of chopped anchovies (canned ones) to be saute with the garlic in olive oil and also some chilli flakes or black pepper...before adding the spaghetti.......top it with bacon bits or anything that fancies you to this dish .....and don't forget to add grated parmesan cheese before serving........here are some pics of my variations......

:) I ordered this with basil and tomato in an Italian restaurant a couple of years ago which costs an arm and a leg.
I came home and did it myself. It is a great dish for vegetarians. I think fresh basil gives it a nice touch and cherry tomatoes give it a bit of a sweetness with the chillies.

Dora - yeah..this is something fusion and multi racial....
Love garlicky pasta! Try this recipe which I've borrowed from Martha.... roast a couple of bulbs of garlic(toaster oven is fine, takes 45-60 mins), slice thinly a few cloves and mince another couple of cloves finely.
Boil pasta al dente.
Fry the slices in some oil, remove when golden crisp. Set a side.
Throw in the minced garlic, fry, add in pasta, toss ard. Add in seasonings of choice. Then add in the mushed up roasted garlic.
Finally, throw in the garlic crisps and finish with a few grinds of parmagianno. Yummy! make sure everyone eats it(they will!) so everyone smells the same! Love to use this pasta with BBQ meat in the summer.

sue me - u can just add in the anchovies with a little of the oil fr. can if u do not have time to chop and fry it...
Buy frozen ready cooked prawns fr. supermarket....just blanched in hot water....
